Can Nigella's Scotch Pancakes be frozen? Also is there any way of telling which recipes are suitable for freezing?
Our answer
Nigella's Scotch Pancakes (from Feast and on the Nigella website) can be frozen, as can her American-style pancakes. Cook the pancakes and let them cool on a wire rack. Put the pancakes in an airtight container with a piece of baking parchment (parchment paper) in between the layers of pancakes. Alternatively, put the pancakes in a single layer on a baking sheet lined with baking parchment and freeze until solid. Once the pancakes are frozen transfer them to a resealable freezer bag.
The pancakes can be frozen for up to 3 months. They can be reheated from frozen in a microwave, in 10-15 second bursts, or in a toaster or under a preheated grill (broiler) for 1-2 minutes (turn over halfway if under the grill). Make sure that the pancakes are piping hot after reheating and cool slightly before serving.
