Is it possible to freeze the Sesame Peanut Noodles or will they keep just as well in the fridge and for how long?

Our answer

Nigella's Sesame Peanut Noodles (from NIGELLA EXPRESS) tosses cooked egg noodles and vegetables in an Asian-influenced dressing. Unfortunately we would not recommend freezing any leftovers, as the noodles and salad will become very soft when thawed.

Leftovers should keep in the fridge for up to 5 days. Transfer the noodles and salad to an airtight container and refrigerate straightaway. If you are using different vegetables then the noodles may not keep for quite as long if the vegetables are delicate and soften quickly (for example, beansprouts). If you are making the noodles in advance for a special occasion then we would suggest preparing the noodles and vegetables a day ahead and leaving them in separate containers in the fridge. Mix up the dressing ingredients, except for the lime juice, a day in advance and leave in a container or jar in a cool place, but not the fridge. Just before serving, whisk the lime juice into the dressing then toss the noodles and vegetables with the dressing and sprinkle over the sesame seeds.
