With respect to Cauliflower, Garlic and Turmeric Soup, would you recommend using fresh turmeric and, if so, how much and how would it be cooked?

Our answer

Nigella's Cauliflower, Garlic and Turmeric Soup uses a combination of roasted garlic and ground turmeric. It makes a golden yellow bowlful that is packed with vegetables and phytonutrients.

Ground turmeric is used as it is easy to find and use. We suspect that you would be able to use grated fresh turmeric and usually you would need to use double the amount of fresh to dried (i.e. 2 teaspoons of finely grated turmeric). We would add the fresh turmeric at the same point as you use the dried turmeric. Taste the soup after you have added the stock and if you feel that the soup needs a little extra turmeric then you can add some more at this point. Bear in mind that turmeric stains easily, so you may want to wear some CSI-style gloves when you are handling fresh turmeric.
