Frozen Raspberries And Chambord For Pudding Cake

Full question

Can you use frozen raspberries for the Chocolate Raspberry Pudding Cake? Fresh ones are hard to come by in January. Also is it possible to omit the Chambord liqueur?

Our answer

Nigella's Chocolate Raspberry Pudding Cake (from HOW TO EAT) is a rich chocolate cake studded with raspberries. We haven't tried the cake with frozen raspberries ourselves but know people who have done so successfully, so we believe it is possible to use frozen raspberries. However the raspberries should be used direct from frozen and not thawed first. The raspberries will defrost as the cake bakes and are easier to mix in than those that have been frozen and then defrosted.

Chambord is a raspberry flavoured liqueur and compliments the flavours of the cake, but it can be omitted. We would suggest using 1 teaspoon of vanilla extract instead.
