Hi, I'd like to make the Ginger Glazed Ham for a BBQ party and was wondering whether I could finish the ham off on the BBQ after it's poached in the ginger ale? Or would the glaze catch too much on the heat? Thanks, Jane
Our answer
Nigella's Ginger Glazed Ham (from Christmas and on the Nigella website) is cooked gently in ginger ale and then finished with a glaze of ginger jam and mustard. The glazed ham is cooked in a very hot oven for 20 minutes, to burnish the glaze slightly.
It is probably possible to complete the glazing stage on a BBQ but it would be best if this was done with a gas BBQ, as it is easier to control the temperature. We have not tried this so can't guarantee the results but we suspect that you should preheat the BBQ to 220c/425F but only use the outside burners (or follow your BBQ handbook directions for indirect heat). Put the ham on an old baking sheet that has been lined with foil (or lined with a foil drip pan). Put the ham in the BBQ, away from the direct heat source, lower the lid and cook for about 20 minutes. Check the ham regularly after the first 10 minutes as the BBQ heat could be more fierce than expected.
