I would like to make the Glitzy Chocolate Puddings for a dinner party. Can they be prepared in advance?
Our answer
Nigella's Glitzy Chocolate Puddings (from NIGELLA EXPRESS) are light chocolate sponge cakes that are served with a warm chocolate glaze and crushed honeycomb bar (Crunchie). The sponge mixture is based on whisked whole eggs and so the puddings will be lightest if served straight after making and baking. However we suspect that the pudding batter can be made a little in advance.
If you want to make the puddings in advance then make the sponge up to half a day ahead and refrigerate the batter in the ramekins until ready to bake. Bake the ramekins at the same oven temperature but put a large baking sheet into the oven to heat up as the oven heats. Put the ramekins directly onto the hot baking sheet and bake for 25 to 30 minutes. The sponge should be slightly risen and firm to the touch. The glaze can be made in advance, but as it is as easy to make the sauce as to reheat it then we suggest that you put the chopped chocolate and butter into a saucepan before your guests arrive and leave in a cool place until you are ready to make the glaze. We would also mention that as we have not tested making the puddings in advance we are unable to guarantee the results.
