Would gluten-free flour work in the Glitzy Chocolate Puddings recipe? If yes, would an all-purpose "measure for measure" blend be best, or would something like rice flour just be substituted for wheat? I'm guessing almond flour (which is just finely chopped nuts) would not be a good texture substitute here. Thanks.

Nigella's Glitzy Chocolate Puddings (from NIGELLA EXPRESS) are individual chocolate sponge pudding cakes that are served with a warm chocolate sauce and given "glitz" with a sprinkling of crushed honeycomb candy.
The proportion of flour to other ingredients in this recipe is quite low, which suggests that it may be possible to use a gluten-free plain flour or an all-purpose baking blend and you would use the same weight as for plain regular flour. Using a 50/50 mixture of ground almonds (almond meal/flour) and gluten-free flour often helps as it offsets the extra moisture needed by gluten-free flours and can stop the texture from becoming too dense. However, the puddings will not rise as much with a gluten-free flour and may be slightly more like a warm brownie, though will have a delicious flavour. We would also mention that as we have not tried the puddings in gluten-free form, we are unable to guarantee the results.
