Guinness Cake Without Gluten

Full question

I would like to make Nigella's Chocolate Guinness Cake for a friend who is gluten-free. Can I use gluten-free flour instead of normal flour and would it turn out just as good? If yes, do I use the same quantity of gluten-free flour? Many thanks!

Our answer

Nigella's Chocolate Guinness Cake (from FEAST) is a very popular cake thanks to its moist, rich texture and taste. Unfortunately we have not tried the cake with gluten-free flour and it is not possible to make a gluten-free version of the cake as Guinness is made with malted barley, which contains gluten.

However Nigella has a selection of gluten-free cakes that are worth considering as alternatives. If you want to stick with a chocolate cake then the Chocolate Olive Oil Cake (made with ground almonds) is popular, as is the Chocolate Cloud Cake. The Flourless Chocolate Brownies with Hot Chocolate Sauce are also very versatile as they can be served warm as a dessert, or cold as a squidgy brownie.

  • I have substituted Guinness with Kukko Schwartz (made by Laitila brewery here in Finland) which is gluten free, and wheat flour with gluten free baking cake mix, and got just as tasty a cake as the normal version. Just be careful as not to overbake as g-free bakings tend to turn to sawdust fast enough...
