Hi, if I halve the recipe for the Ultimate Christmas Pudding, do I steam for the same length of time or do I cut the cooking time in half? Thanks.

Nigella's Ultimate Christmas Pudding (from NIGELLA CHRISTMAS) makes either a 1.7 litre (1½ quarts or a UK 3 pint) pudding or you can make two smaller puddings, one of 1.2 litres (1 quart or 2 UK pints) plus one of 600 mls (0.5 quarts or 1 UK pint).
Nigella suggests three hours initial steaming plus an extra 3 hours steaming on the day for both of these sizes, so for a 850mls pudding (0.75 quarts or 1.5 UK pints) we would use the same timings. Steaming is a very gentle method of cooking and the pudding can be left for longer on the second steaming if that suits your Christmas Day timetable. Christmas puddings are traditionally made on Stir-Up Sunday, which this year is Sunday 21st November.
