Halving Ingredients In Nigella Recipes

Full question

Most of Nigella's recipes are for 4 or 6, however I am usually cooking for 2. Is it ok just to cut all ingredient measurements in half?

Our answer

For most of Nigella's recipes it is easy to halve the quantities of ingredients to make a smaller number of portions. The exception is baking larger cakes, as these can be difficult to scale down. But for cupcakes and muffins you can usually halve the ingredients to make a smaller number of cakes. If you end up needing half an egg then we suggest using an egg yolk instead as this is easier to measure. But quite a few, such as the Chocolate Banana Muffins are very easy to halve.

Wherever possible Nigella also tries to give freezing information, as this can help if you would like to stash some portions in the freezer to use at a later date. Or there are suggestions to use up leftovers, particularly for slow cooked dishes such as Beer-Braised Pork Knuckles With Caraway, Garlic, Apples And Potatoes. In many of Nigella's books the information can be found at the end of the recipe or in a special section at the end of the book.
