I happen to hate rosemary (no disparaging comments, please!). I usually avoid recipes that include it, but would really like to try the Bar Nuts. Is there anything I could substitute it with? Or would leaving it out completely ruin the recipe?

Nigella's recipe for Bar Nuts bathes roasted, mixed nuts in a slightly sweet and slightly spicy butter glaze. They are almost irresistible and perfect to serve at parties or with drinks. The rosemary provides a woody, slightly bitter note that balances the sugar and spice. Its needle-like leaves are also quite resilient and don't become too soft when heated.
However, if you don't like rosemary then we suggest that you just omit it from the recipe. There isn't a particular replacement that we would recommend as other herbs could wilt with the heat from the roasted nuts. The mixture won't taste quite the same, but the nuts will still have a spicy moreishness.
