Full question
Hello. I would like to make the Chocolate Tahini Banana Bread in mini loaves (either 12 or 8 mini loaves in one tin). Do you think this will work and if so how long do you recommend baking them in the oven for? Thank you!
Our answer
Nigella's Chocolate Tahini Banana Bread is a rich chocolate loaf with a slightly nutty flavour from tahini. The loaf is baked in a 1-pound/450g tin that is approximately 21cm x 10cm x 6cm/8.5 x 4 x 2.5 inches. This size of pan would usually convert to an 8 mini-loaf pan, where each cavity has length and width of approximately 10cm x 6cm/3.8 x 2.5 inches.
You should fill each indent in the mini loaf pan no more than half full with cake batter. If you have any batter left over then you could use this to make some muffins, again filling each paper muffin case no more than half full of batter. We suspect that the baking time for the mini loaves would be approximately 25 minutes, however you should start checking after 20 minutes. When baked, the mini loaves should be risen and slightly shrinking away from the sides of the pans and a cake tester inserted into the centres should come out clean. Muffin versions should take 20-25 minutes. However, please note that as we have not tried the recipe in this form, we are unable to guarantee the results.
