How Can I Making The Cupcakes Into A Full Sized Cake?

Full question

I would like to use Nigella’s cupcake recipe to make a 10-inch birthday cake. How would I adjust the recipe and still have the same fluffyness?

Our answer

Nigella's Cupcakes recipe (from HOW TO BE A DOMESTIC GODDESS) has a Victoria sponge cake base. This is a 2-egg quantity of cake batter, which would be enough to make a single layer of a 20cm/8-inch cake (doubling the recipe would give a two-layer cake).

Unfortunately it is difficult to scale cakes and bake cakes that are larger than 20cm in a domestic oven and you would likely need an 8-egg quantity of the cupcake batter to make a two layer 25cm/10-inch cake (i.e. 4x the original recipe). This size of cake, split between two cake pans, would take approximately 30 to 40 minutes to bake at 180c/160 Fan/350F. However as we have not tried the cupcake batter in this form, we are unable to guarantee the results. You may like to consider Nigella's Birthday Custard Sponge as a birthday cake. It is a 20cm/8-inch cake but is very popular and you could always make two cakes rather than one.
