Can I Make Christmas Cupcakes As A Loaf Cake?

Asked by Nickyb1969. Answered on 8th December 2022

Full question

I would love to make the Christmas Cupcakes into a loaf cake. Any suggestions on oven temperature and timing would be appreciated!

Our answer

Nigella's Christmas Cupcakes (from HOW TO BE A DOMESTIC GODDESS) are spiced chocolate cupcakes that can be decorated with royal icing and holly leaves made from coloured rolled fondant icing.

If you were to make a loaf cake version of the cupcakes then we suspect that you would need a double quantity of the batter for a 900g (2-lb) loaf pan (approx 24 x 12 x 18cm or 9 x 5 x 3 inches with a capacity of approx. 1.5 litres or 6 cups). Line the pan with a paper liner or with baking parchment (parchment paper). Fill the pan no more than 2/3 full with cake batter. As the cake batter is quite liquid, we would suggest reducing the oven temperature to 180c/160c fan/350F. We suspect the baking time would be 45 minutes to 1 hour, but could be slightly longer and the cake should be done when it is risen, firm to the touch and a cake tester inserted into the centre comes out clean. Cool for 10 minutes in the pan then turn out onto a wire rack to cool completely. However, please note that as we have not made the cupcakes in loaf form ourselves, we are unable to guarnatee the results.
