How Can I Tell When The Chocolate Malteser Cake Layers Are Cooked?

Full question

The Chocolate Malteser Cake is a real crowd pleaser, but the cakes can often take a little longer to cook than 25 mins. How can I check if they are done? (Also I also upped the cocoa in the frosting to give it a more chocolatey vibe, loved by kids and adults in equal measure!)

Nigella's Chocolate Malteser Cake (from FEAST) has chocolate malt-flavoured sponges that are sandwiched with a malt-flavoured butter icing. The cake batter is slightly more runny than some cake batters so the baking time for the sponges can vary, particularly as all ovens vary slightly.

When you first check the cakes, open the oven door a little and if the sponges look like the surface is still slightly wrinkled then gently shut the door and let them bake for another 5 minutes. If the surface looks smooth and the sponges have risen then carefully check - they should be firm to the touch and a cake tester inserted into the centre should come out clean. The sponges should also be just starting to shrink away from the sides of the pans. If the sponges are still slightly undercooked, let them bake for another 3-5 minutes and check again.
