How Can I Use Up Left Over Roast Duck?

Hi, Hope you all had a lovely Christmas. I roasted a duck today and have leftover meat and I don't want to waste it. Any suggestions? I have thought of duck spring rolls but I hate plum sauce - is there an alternative? All suugestions greatly received! Sona.xx

Leftover duck mixes well with rice and would be an ideal meat to use for a Nigella's Mixed Meat Pilaff which appears in Kitchen on p198, or the Chinatown Chicken salad on p228 would also be good made with duck instead of chicken. The Quick Cassoulet in Christmas p152 would also be great made with leftover duck instead of leftover goose.

If you also have some leftover duck fat then you can make duck hash - dice up and saute some potatoes until golden, with a clove of crushed garlic if you like, adding the duck to heat through for the last couple of minutes. Sprinkle with a little chopped parsley just before serving. If you don't like plum sauce then you could make Moo Shu duck instead by frying mushrooms, bamboo shoots and mushrooms then stirring in some eggs and hoisin sauce until the eggs scramble (or adapt a pork moo shu recipe to use the leftover duck instead) and serve wrapped in Chinese pancakes. The duck could also be used as a filling for quesadillas or spring rolls.
