How do I measure golden syrup? especially when it sticks to the measuring spoon. I have tried to make the Hokey Pokey recipe a couple of times and am wondering if it is this that is stopping it turning out well. Thanks for the awesome recipes too :)

There are various methods to measure golden syrup (this will also work for corn syrup in the US). Lightly greasing your measuring spoon, spoon or cup measure with a flavourless oil, such as sunflower, groundnut/peanut, vegetable or canola oils, should help the golden syrup to glide effortlessly off the spoon/cup and into the bowl. If measuring large amounts then you may need to re-oil occasionally. If you don't have flavourless oil to hand, or are only measuring a tablespoon or two, then try dipping the spoon briefly in some just boiled water to warm the spoon, before measuring the golden syrup out (you will need to re-dip the spoon in the water if measuring more than one tablespoon).

If you have some scales and need to measure a large amount of golden syrup by weight then you can either stand the tin in a bowl of warm water for 5 minutes to warm the syrup and make it easier to pour into a container on your scales, or weigh the can of syrup and spoon out syrup until the weight has reduced by the amount you need (eg if the tin of syrup weighs 450g on your scales and you need 200g syrup then keep spooning syrup out until your scale shows 250g).
