How I Make My Parmesan Shortbreads Less Crumbly?

Asked by magellan. Answered on 10th February 2018

Full question

The Parmesan Shortbreads were delicious! But mine were very crumbly - luckily they fit into the mouth in one pop! But if I wanted them to be a little more solid what could I use?

Our answer

Nigella's Parmesan Shortbreads (from NIGELLISSIMA) are melt in the mouth savoury biscuits (cookies). The texture of the cookies is slightly crumbly and the name "shortbread" originates from the short, or crumbly, texture.

If you would like a slightly more sturdy cheese biscuit then we would suggest trying Nigella's Cheese Stars recipe. These are made with slightly different ratios of flour, butter and cheese. The cheese used is cheddar, instead of Parmesan, and the dough can be rolled and cut into shapes before baking. They are particularly good when made with smoked cheddar.
