The fudge icing enrobing Nigella's Chocolate Fudge Cake (from Nigella Bites) is a mixture of butter, vanilla, icing sugar (confectioner's sugar) and melted chocolate. This mixture freezes well. Once it has been mixed, pack the icing into an airtight container and freeze for up to 3 months. To use the icing thaw it overnight in the fridge then let the icing come up to room temperature and beat briefly with an electric mixer or wooden spoon before spreading over the cake.

If you are making the whole cake in advance then freeze the cake layers and icing separately. Wrap the cake layers in a double layer of clingfilm (plastic wrap) and a double layer of foil. To thaw the cake unwrap the layers and put them on a wire cake rack. They should thaw in 2 to 3 hours at room temperature.

Please note that the chocolate fudge icing on Nigella's Devil's Food Cake (from Kitchen) does not freeze well.
