Our answer

Nigella likes her Brownies (from HOW TO BE A DOMESTIC GODDESS) to be squidgy and dense. To get this texture the brownies should be mixed gently and not baked for too long. The butter and chocolate are melted and then the eggs, sugar and vanilla are added. The eggs and sugar should be beaten just enough to break up the eggs and slightly dissolve the sugar. You can do this by hand just with a fork. You don't need to whisk the eggs and sugar until they have increased in volume, as this can add too much air into the brownies and make them too cake-like.

Once you have added the eggs to the chocolate, mix until just combined then add the nuts and flour and beat just until combined and smooth. You can do this by hand with a wooden spoon. To test if the brownies are baked, insert a skewer into the centre. The skewer should come out with just a few damp crumbs attached, but not raw brownie batter.
