Full question
Hi there, I'm baking the Guinness Gingerbread from the Kitchen book to give as gifts for Christmas and was wondering how much in advance can I bake? Or how long it will keep for?
Our answer
Nigella's Guinness Gingerbread (from KITCHEN) is a moist, slightly sticky spice cake. The Guinness adds a liquorice tang that helps to counter the sweetness of the cake and sour cream provides richness and a soft crumb.
Cakes such as this gingerbread, that are made with syrup, tend to keep well and are often better a day or so after they are made. This gingerbread will keep for a total of up to two weeks if stored in an airtight container in a cool place, though is at its very best within the first week. So adjust the "eat by" date according to when you made the gingerbread. We would suggest keeping the pieces of cut gingerbread as large as possible. Wrap the pieces tightly in a layer of baking parchment (parchment paper) and a layer of food wrap and keep them in an airtight container in a cool place until they are given.
