How Much Cabbage Do I Need For New Orleans Coleslaw?

Full question

Does the New Orleans Coleslaw really use 1 kg of cabbage? Even after trimming I cut that up and ran out of room in my large stockpot. I ended up using half the amount and it still looked enough to feed 8.

Nigella's New Orleans Coleslaw (from NIGELLA EXPRESS) has a tangy dressing made from a combination of mayonnaise, buttermilk and maple syrup. The salad also includes pecans and Louisiana is well-known for its pecan production and New Orleans for its pecan pralines.

The portion sizes may be slightly generous, but the salad will keep in the fridge for up to 5 days (if using store-bought mayonnaise) and leftovers of the salad are usually very popular. However, if you would like to make a smaller amount then do reduce the amount of cabbage to fit the size of your bowl. If you don't use all of the mayonnaise dressing then leftovers can be stored in the fridge for up to 5 days and used on other salads. This coleslaw is particularly popular at Christmas, where you could use a seasonal combination of red and white cabbage.
