I Forgot To Put Eggs In The Ultimate Christmas Pudding!

Full question

I made the Ultimate Christmas Pudding today and stupidly forgot the eggs. It’s had the initial 5 hour boil and looks moist and reasonably well bound. Have I ruined Xmas?

Our answer

Nigella's Ultimate Christmas Pudding (from NIGELLA CHRISTMAS) is a traditional steamed Christmas Pudding. The eggs in the pudding provide some moisture, as well as acting as binding agents. Eggs can also make the pudding a little bit lighter and the main risk is that without eggs the pudding could be a little rubbery in texture.

If you are worried, we suggest taking a small spoonful from the centre of the pudding as it sits in the basin. Once it is turned out, you won't be able to see the dent as it will be on the base. Heat this in a microwave, cool slightly and taste it. If you like the taste and texture then you could go ahead and steam and serve the pudding on Christmas Day, as steaming is a very moist and gentle form of cooking and the pudding should not dry out. If you are worried then there is still time to make another pudding and we would suggest crumbling up the eggless pudding and then using it to make Christmas Puddini Bonbons to have as after dinner treats or to give as gifts at Christmas.
