Could one use tuna instead of feta for the Courgette Fritters?
Our answer
Nigella's Courgette Fritters (from NIGELLA SUMMER are vegetable pancakes that are studded with salty nuggets of feta cheese. They are shallow fried rather than deep fried and are good eaten at room temperature, meaning they can be cooked up to 2 hours in advance.
Unfortunately we don't particularly recommend using canned tuna instead of feta cheese as the tuna will break up a lot as you mix the fritters. The tuna is also moister than feta cheese and could make the fritters slightly soggy. You could use another firm, slightly salty cheese, such as Wensleydale or Cheshire, instead. If you have canned tuna to use up then we would suggest looking at Nigella's recipe for Salmon Fishcakes as the canned salmon could be swapped with well-drained canned tuna instead.
