Andrew's Vegetarian Christmas Pie

Introduction

As a vegetarian teenager, this was my favourite alternative Christmas dish. Very filling, rich and savoury. I think everyone else rather resented the turkey and wanted the pie instead!

Ingredients

Serves: 3-6

Metric Cups
  • ½ kilogram maris piper potatoes Sliced thinly
  • 200 grams Cheddar cheese Extra mature cubed
  • 1 large onion Chopped
  • 1 dash double cream (large dash)
  • 1 packet puff pastry
  • 1 butter for greasing
  • 1 grinding black pepper
  • 1 pinch of salt
  • 1⅛ pounds maris piper potatoes Sliced thinly
  • 7 ounces Cheddar cheese Extra mature cubed
  • 1 large onion Chopped
  • 1 dash heavy cream (large dash)
  • 1 packet puff pastry
  • 1 butter for greasing
  • 1 grinding black pepper
  • 1 pinch of salt

Method

Andrew's Vegetarian Christmas Pie is a community recipe submitted by LittleAlex and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • First, peel and then par-boil the potatoes. Drain them and leave to the side.
  • Roll out the pastry and ideally using a Springform Pan cut out a circle of pastry for the top of the pie.
  • Next, butter the pan. Use the rest of the pastry to line the pan.
  • Next add a layer of potato, then a layer of cheese and onion, seasoned with pepper. Repeat until pie is full. Now add the cream to the top of the mixture.
  • Put the cut out lid on top of the pie, creating a small whole in the centre for any steam to escape. Use any remaining pastry to decorate the pie. Leaves look good or even spell out Merry Christmas!
  • Bake at 200-degrees for 40 minutes or until golden. Enjoy.
