Hello from Cairo! I would like to know the measurements for Instant Chocolate Mousse for 15 people. Also it is possible to serve it in a big bowl instead of small individual glasses? Thanks for your kind help Iman Essam

Our answer

Nigella's Instant Chocolate Mousse (from Nigella Express and on the Nigella website) is easy to make and sets very quickly, and it is also useful for those who would like to avoid using raw eggs.

Nigella's recipe makes enough for 4 servings so for 15 servings you would need to make 4 times the quantity stated in the original recipe. You will have one extra portion but to make exactly 15 portions makes the measuring of the ingredients slightly fiddly. However, making 4 times the recipe at one time is not easy due to the quantities involved, you will need an extremely large saucepan to melt all of the marshmallows and chocolate, and a very large bowl to whip the cream in. Instead we would suggest making two batches, each with 2 times the quantities in the recipe, to give enough portions. You will still need a very large saucepan to melt the chocolate and marshmallows.

You could put the mousse in a large bowl but if you are making it in two batches then it would be easier to set each batch in its own bowl (i.e. 2 large bowls), and again you may find that you would need to have a very large bowl to set all of the mixture. Also the mousse is quite soft so you may find that when you spoon it into dishes from a big bowl it may not look quite so attractive.
