Instant Chocolate Mousse Marshmallows

Marshmallows aren't easily available in india so is there aything I can use in place of marshmallows while making Nigella's Instant Chocolate Mousse? Thanks.

Our answer

Nigella's Instant Chocolate Mousse (from Nigella Express and on the Nigella website) is made from a mixture of melted choclolate and marshmallows and whipped cream. The marshmallows contain gelatine and it is the gelatine that helps the mousse to set. Unfortunately it is difficult to replace the marshmallows, unless you wanted to make a mixture of whisked egg whites and sugar (an Italian meringue) and gelatine yourself.

We would suggest looking at some alternative recipes instead. You can make a classic chocolate mousse with melted chocolate, egg yolks and egg whites, but note that this would contain uncooked eggs so would not be suitable for children, pregnant women or those with a weakened immune system. Nigella also has a recipe for Instant Choclate-Orange Mousse in Nigellissima that is made with dark chocolate, condensed milk and whipped cream. The recipe is on p148 of Nigellissima, though we regret that it is not currently available on the website.
