Is it possible to halve the Mexican lasagne recipe? I have a smaller dish that's 20cm x 6cm, and would like to avoid having to buy a special dish.
Our answer
Nigella's Mexican Lasagne (from KITCHEN) is made with flour tortillas that are layered with a home-made salsa and vegetarian fillings. Nigella makes hers in a dish with a diameter of 26cm (10 inches).
It is possible to make a smaller version with a 20cm (8-inch) dish and smaller tortillas, but this would need approximately ¾ of the sauce and filling and not half. For the salsa it may be easier to make a full quantity and use the leftovers as a dip with tortilla chips or to serve with quesadillas. The salsa can also be frozen in a resealable container for up to 3 months. The baking time may be slightly shorter but we would still allow 25-30 minutes, to make sure that the Mexican Lasagne is piping hot in the centre. Leftovers can be kept in the fridge for up to 5 days and can be covered in foil and reheated in a 180°C/160°C fan/350°F oven until piping hot.
