Full question
Is it really just 15g of butter in the Butterscotch Pots?
Our answer
Nigella's Butterscotch Pots (from AT MY TABLE) is a caramel flavoured pudding that is flavoured with a base of caramelised sugar and butter. The sugar is added to the melted butter and cooked until it becomes a teak-coloured sauce. The butter helps to dissolve the sugar, making it a little easier to cook the sugar to a caramel.
The amount of butter used is 15g (1 tablespoon). This is the correct amount and bear in mind that the recipe makes only two portions. When you first start to cook the butter and sugar together the mixture will look grainy, but as the sugar melts it will become smooth and start to caramelise, so be patient.
