The Wide Noodles With Lamb Shank was not a success for me. Despite all the aromatics the broth tasted thin - in flavour and in mouthfeel. Maybe I expected something more like the umami-rich Asian broths? And how big should the lamb shank be? They vary a lot in size.

Nigella's Wide Noodles With Lamb Shank In Aromatic Broth (from COOK, EAT, REPEAT) has wide noodles and vegetables that are served with shredded lamb shank and a light broth made from the cooking liquor from the lamb shanks. Most ramen soups will be served with a stock that has been cooked separately, for a long period and is bolstered with the addition of bonito flakes and kombu (or dashi stock), so will be a different style to NIgella's broth. When you reheat the stock do taste it and adjust the seasoning to suit your own palate. Chilli crisp is the best accompaniment, but you could also serve some soy sauce alongside.
Unfortunately the size of lamb shanks can vary a lot and it is not particularly useful to be too prescriptive. We would suggest just looking for the meatiest shank possible. Shanks can come from the front legs (front shank) or back legs (hind shank). Hind shanks are larger so it may help to ask your butcher if they have hind shanks.
