Full question
Is there a suitable substitution for black molasses/treacle in recipes like the Luscious Vegan Gingerbread? Where is it usually found if not at the grocery store? Thank you!
Our answer
Nigella's Luscious Vegan Gingerbread (from COOK, EAT, REPEAT) uses a combination of treacle (molasses) and golden syrup. Treacle is a byproduct of the sugar refining process and has a slightly bitter taste that helps the gingerbread from becoming too sweet.
Treacle can usually be found in most UK supermarkets and molasses can be found in most US gerocery stores and supermarkets. It is also possible to buy them on line. Unfrotunately, most of the alternatives lack the slight bitterness and will make the gingerbread taste much sweeter overall, so we prefer to use treacle or molasses if possible. But you could try dark corn syrup, rice syrup, or date syrup. Maple syrup is probably too expensive to use in a large quantity and you won't appreciate its delicate flavour in the gingerbread. You could use honey, but honey tends to have quite an assertive flavour so is not ideal.
