What could I use instead of amaretti biscuits (I hate amaretto) for the Christmas Rocky Road? Not pretzels either, as someone suggested. Would probably use pecans/hazelnuts instead of Brazil nuts too, but really fancy trying this.

Nigella's Christmas Rocky Road (from NIGELLA CHRISTMAS) are a seasonal version of the classic rocky road bars. The bars are very easy to make and don't require any baking.
Rocky road usually consists of a crunchy biscuit mixed with dried fruits plus nuts and possibly mini marshmallows. This mixture is combined with melted chocolate and butter and left to set. The Christmas version contains amaretti cookies as these are often sold at Christmas, but you could use another cookie such as rich tea biscuits (Marie cookies) or shortbread. You can certainly change the nuts as well, to suit your own taste. Just keep to roughly the same weights as in the recipe, so that you have enough chocolate mixture to bind the bars together.
