Full question
Have I missed something? I can’t find any mention of chilli powder in this Cheesy Chilli. Can I add some?
Our answer
Nigella's Cheesy Chilli (from KITCHEN) has diced mozzarella stirred in just before serving, which is in lieu of the usual Tex-Mex accompaniment of grated cheese and sour cream. The chilli includes pieces of chorizo that are cooked at the beginning to let out their spicy orange oil. The chorizo acts as the spicing for the chilli, rather than using chilli powder.
This gives a mild but flavoursome chilli. However, if you prefer more heat then we would suggest adding 1-2 teaspoons of your favourite chilli powder, depending on your own taste and the strength of the chilli powder. But do bear in mind that the chilli will already have some spicing from the paprika in the chorizo. Add the chilli powder when you add the cocoa powder and oregano. You may also like to try the chilli element of Nigella's Cornbread-Topped Chilli Con Carne, which uses a combination of chilli flakes (crushed red pepper flakes), ground cumin and ground coriander.
