Keeping Chocolate Fudge Cake

Asked by marieofarrell100. Answered on 18th August 2013

Full question

If I don't cut Nigella's Chocolate Fudge Cake and leave it in the fridge how long will it stay fresh?

Our answer

We would try to avoid keeping Nigella's Chocolate Fudge Cake (from Nigella Bites) in the fridge as the cake can absorb the stronger smells from other foods in the fridge and refrigeration doesn't always help to keep the cake stay fresh. You only need to refrigerate cakea that have a very perishable frosting or filling (such as whipped cream). The exception is if the climate is very hot, as high temperatures can cause the frosting to spoil.

If the cake is frosted then the frosting will help to keep the cake part fresh. We would suggest keeping the cake in an airtight container (or on a stand, covered with a cake dome) in a cool, dry place for 3-5 days. Once the cake has been cut it will stale more quickly. The cake is at its best within the first 3 days. If you need to make the cake further in advance then we suggest making the cake part and freezing it. Wrap each cake layer in a double layer of clingfilm (plastic wrap) and a layer of foil. Freeze for up to 3 months. To thaw, unwrap the cake, stand it on a wire rack and let it thaw at room temperature for 2 hours. Then frost the cake as directed in the recipe.
