The meringue of my Lemon Pav came out huge! Is this supposed to happen?
Our answer
Nigella's Lemon Pavlova (from SIMPLY NIGELLA) has a meringue base that is made with 6 egg whites. This does make quite a large pavlova, approximately 23cm/10 inches in diameter. It also serves up to 12 people, so it will be on the large side.
In addition a meringue has quite a bit of air whipped into the egg whites and this will tend to expand while the meringue is baking, which will make it slightly larger once it is baked. If the meringue has risen a lot then you may find that the centre sinks back a little as the meringue cools and the top will crack slightly, but this is normal and won't be seen once the meringue is topped with lemon curd, cream and almonds.
