Leftover Ideas for Bbq Gravy?
Asked by Kelly-Jane. Answered on 22nd January 2012
Full question
I've just made Ed 's Mother's Meatloaf from Kitchen (again), and this time I made the BBQ Gravy (p458) to go with it. I have a cupful left, it was lovely and it seems a shame to waste it, but I'm not sure what to do with it. Any ideas please?
Our answer
The leftover BBQ gravy could be used in a few ways. You can freeze the leftover sauce in a resealble container for up to 3 months and then just thaw and reheat it (until piping hot) next time you make meatloaf. You could also make a batch of the Barbecued Beef Mince from Kitchen (p33) and add it to this mixture for a slight extra kick.
Alternatively you could use the leftover gravy as a marinade for a few chicken thighs and drumsticks, chipolata sausages (in the US use breakfast sausage links) or even spare ribs. Marinate the meat overnight then cook the meat accordingly - for a rough guideline on cooking chicken drumsticks see the African Drumsticks recipe in Kitchen p46, for sausages see Cocktail Sausages p418 and for ribs see Conker-Shiny Spare Ribs p392.
