Leftover Meatzza

Full question

I cooked Nigella’s Meatzza for the first time and there is about two thirds left over. Is it possible to reheat the remaining Meatzza and if so which is the best way? I have a gas oven and also a microwave.

Our answer

Nigella's Meatzza (from NIGELLISSIMA) is made from a base of minced (ground) beef topped with tomato sauce and mozzarella. It is rather like a juicy disc of meatloaf with a pizza topping. Meatzza is at its best when freshly made but as the recipe serves 4-6 (depending on appetite and what is served alongside) there can be leftovers. Leftovers should be refrigerated as quickly as possible and within 2 hours of cooking.

Leftovers are excellent served cold in a sandwich or can be reheated. If reheating in a microwave then put a portion on a microwaveable plate and cover loosely with paper towels or with a microwaveable cover. Reheat following the instructions in the microwave manufacturer's handbook or use short 10 to 20 second bursts of high power until the Meatzza is piping hot all the way through. If reheating in an oven wrap the slices of Meatzza loosely in foil and reheat in an oven preheated to 200C/180C fan/400F for about 15-30 minutes, until piping hot all of the way through. The timing will depend on the size of the slices. Whatever method you use to reheat, make sure that the Meatzza is piping hot and then let it cool slightly before serving.
