Lime Juice In Chocolate Lime Cheesecake

Asked by Jacqu. Answered on 21st October 2016

Full question

The Chocolate Lime Cheesecake asks for the juice of 4 limes but I find the amount of juice depends on where you get them from (home grown ones have copious amounts of juice). Is there a quantity I should use?

Our answer

Nigella's Chocolate Lime Cheesecake (from NIGELLA BITES) is a baked cheesecake with a chocolate cookie base and a lime-flavoured filling. The recipe uses the juice of 4 limes and a regular lime bought in a supermarket will contain approximately 2 tablespoons of juice. So for the recipe you would need about 8 tablespoons (120ml/1/2 cup) of lime juice in total.

The amount of juice from lemons and limes can vary so you could try this tip to extract more juice or even freeze and thaw them to help maximise the juice from the fruits.
