Full question
My Chocolate Lime Cheesecake was slightly browned on the top. Cooked it in my gas oven for 1 hour 20 minutes (it took that long for it to become the consistency described in the recipe). Should I turn the heat down a little next time, or move the position? I cooked the cheesecake in the middle of my oven.
Our answer
Nigella's Chocolate Lime Cheesecake (from NIGELLA BITES) is baked in a water bath. This method is a gentle way of cooking that lets the cheesecake bake evenly and to a smooth, creamy consistency. The baking time can vary as all ovens tend to vary a little - the key is not to bake the cheesecake too quickly.
If the cheesecake is slightly browned on top then this should not be a problem and the cheesecake should still taste delicious. For a gas oven the centre of the oven is usually the best position as you should get the most even and consistent heat in this position. You could try putting the shelf one rung lower but this may lengthen the cooking time a little more. If you want to reduce the browning on top of the cheesecake then it would probably be best to cover the top of the springform tin with a lid of foil towards the end of the cooking time. Don't cover it as soon as it goes into the oven as you need the cheesecake to set on the surface. We would suggest covering the cheesecake after about 50 minutes for your oven, after it has heated through and is starting to set around the edges but before the top starts to colour.
