Making Crust For Salted Chocolate Tart

Asked by emmabaines. Answered on 29th May 2020

Full question

Hi. I made the chocolate tart and it tasted so good. Would certainly make again but when I blitzed the biscuits and the chocolate pieces the chocolate would not process into bits and instead stayed in pieces - I ended up ‘fishing’ them out and cutting them up into tiny pieces before putting back in and trying again. Any advice before I try it again? Thanks.

Our answer

Nigella's Salted Chocolate Tart (from SIMPLY NIGELLA) has a chocolate cookie crumb base made with a combination of chocolate sandwich cookies and plain (bittersweet) chocolate. If your chocolate bar is a thick one then it may help to put the pieces of chocolate into the bowl of the food processor first on their own and give them a few pulses to chop them up slightly before the cookies are added.

Sometimes you get one or two large pieces of cookie left after initially blitzing the mixture. If this happens, switch off the processor and open the top, then use a spatula to move everything around in the bowl before processing again. You may need to repeat this process once or twice to get an evenly ground crumb base.
