I would like to leave the Horlicks out of the icing in the Chocolate Malteser Cake. Would it work without it?
Our answer
Nigella's Chocolate Malteser Cake (from FEAST) is flavoured with a little cocoa plus malted milk powder. You probably can leave the malted milk powder out of the frosting if you are concerned that it will be a little too overpowering, but it will leave the frosting a little tasteless. We would prefer to reduce the malted milk powder slightly and use 2 x (15ml) tablespoons and increase the cocoa powder to 2 x (15ml) tablespoons. This will give more of a malted chocolate flavour, in-line with the flavouring of the sponge.
If you wanted to leave the malted milk powder out of the cake and frosting completely, we would suggest trying a different chocolate cake recipe instead, as the Malteser Cake would taste completely different without the malted milk flavour. We would suggest trying either the Old Fashioned Chocolate Cake or the Devil's Food Cake.
