Full question
I am interested in cooking Nigella's Maple Chicken and Ribs. I don't care for thigh meat. Would the cooking time be similar for chicken drumsticks and ribs?
Our answer
Nigella's Maple Chicken 'N' Ribs (from NIGELLA EXPRESS) marinates chicken thighs and pork ribs in maple syrup, soy sauce and apple juice and then roasts them until they have a sweet and sticky glaze.
Chicken thighs on the bone are ideal for this recipe as they remain moist and juicy during the cooking time. Chicken drumsticks could be used as an alternative, though as they tend to have slightly less meat on them you should look for large drumsticks or add a couple of extra drumsticks if they are small. Drumsticks can also cook more quickly than thighs. The cooking time of one and a quarter hours should not dry chicken drumsticks out but if the drumsticks are small then it is a good idea to check after an hour and if the drumsticks are cooked through then transfer them to a plate and leave them to rest in a warm place while the ribs cook for a further 15 to 20 minutes.
