Maple Pie

Full question

Can I substitute maple syrup for honey in the Honey Pie recipe? We are not very fond of honey, so would prefer to use maple syrup.

Our answer

Nigella's Honey Pie (from SIMPLY NIGELLA) has a baked filling made with honey, cream and eggs. The honey provides sweetness and the eggs help the filling to set.

Maple syrup is less viscous (less thick) than honey, but as it is added to cream we don't think that it will affect the setting of the filling and maple syrup could probably be used as an alternative. Maple syrup is slightly less sweet than honey and has a smoky edge to it, so you may find that you need to reduce the amount of salt in the filling, maybe to the lower level of 1 teaspoon of sea salt flakes suggested in the introduction. We would also mention that as we have not tried the pie with maple syrup, we are unable to guarantee the results.
