I love the Marmalade Pudding Cake, but would it be possible to replace the marmalade with ginger jam? I have some leftover and would like to use it up.

Our answer

Nigella's Marmalade Pudding Cake (from KITCHEN) is a sponge pudding cake that contains marmalalde and is also topped with a marmalade glaze. We suspect that the marmalade could possibly be replaced with a ginger jam, but it depends on the type of ginger jam.

If you have a ginger conserve or preserve, which is a marmalade-like preserve studded with pieces of stem ginger, then we suspect that it would be possible to use this instead of marmalade in the pudding cake. If the jam is more like a puree, perhaps with other fruits included, then we are not sure that it would work as a substitute. If using a ginger conserve/preserve then use the same quantity as for marmalade and we would suggest still using the zest and juice of an orange, as orange and ginger go well together and the juice is needed in both the sponge and glaze. You may also like to try adding a little ground ginger to the sponge batter. However as we have not tried the Marmalade Pudding Cake with these substitutions, we are unable to guarantee the results.
