Marmalade Pudding Cake

Asked by Maggie Ross. Answered on 10th July 2012

Full question

I have this baking now but it seems really wet. The recipe calls for the juice of half an orange in the cake but I realize now that's really vague. How much juice should there be? Thanks

Our answer

The juice of half an orange is usually around 4 tablespoons/60ml/1/4 cup. If you use a tablespoon more or less than this in the recipe then it shoulld not adversely affect the cake base.

The cake batter itself is fairly wet but this is fine as it produces a moist cake. The cake is a sticky dessert cake, slightly more dense in texture than a traditional sponge cake.
