Hi Nigella, the Apple And Walnut Crumble looks so delicious! I have a question - is there any replacement for the marsala?

Our answer

Nigella's Apple And Walnut Crumble (from HOW TO EAT) has an apple filling studded with sultanas that have been plumped up with marsala, a fortified wine. If you don't have any marsala then you could use madeira or a sweet sherry as alternatives. Whisky or bourbon could also be used if you like something stronger. If you prefer to avoid alcohol then apple or orange juice could be used instead.

The recipe uses 3 x 15ml tablespoons of marsala, which is 45ml. A tablespoon in a measuring set is 15ml for the UK and 1/2 ounce for the US. For Australia a tablespoon is 20ml.
