Full question
I'm cooking for 12 hungry teenagers at a sports event in New Zealand and was planning on making Nigella's meatballs for dinner one night. Can I just double all ingredients in the recipe or do I have to be careful with herbs, onion etc?
Our answer
Nigella's recipe for Meatballs (from NIGELLA BITES) is a simple recipe that is easy to make. The meatballs and sauce can also be made up to 3 days ahead and stored in the fridge, then gently reheated before using. Make sure that the meatballs are piping hot all of the way through before serving.
If you want to double the recipe then in this instance we would double all of the ingredients. There is nothing that is particularly spicy or assertive in the ingredients, although you could just use 1 teaspoon of oregano in the meatball mixture if you think that there will be too much oregano. We would mention that for the sauce it will be quite a lot of liquid for a domestic saucepan, so you may find it easier to make the sauce in two separate saucepans and split the meatballs between the two.
