Nigella's Meatballs With Orzo (from AT MY TABLE) is a one-pot recipe where tomato sauce, meatballs and orzo pasta are all cooked in the same pan. The tomato sauce contains 4 tablespoons (60ml/¼ cup) of red vermouth as the vermouth adds some aromatic depth of flavour.

Red vermouth is a useful storecupboard ingredient as it keeps for several weeks after opening but you could use red wine as an alternative if you have a bottle open. If you are avoiding alcohol then you could use one tablespoon of tomato puree (tomato paste) and an extra 3 tablespoons (45 ml) water instead.
