Full question
When I made Mellow Meatballs there was a great deal of liquid. It that right? Should I reduce the amount of stock used?
Our answer
Nigella's Mellow Meatballs (from NIGELLA EXPRESS) is a Thai-style curry made with meatballs. The curry is supposed to have a thinner, almost soup-like, sauce that is soaked up by the rice. However it would be possible to reduce the amount of sauce, if you prefer a thicker version of the dish.
To make a slightly thicker sauce reduce the amount of chicken stock used to 100ml (7 tablespoons). Keep an eye on the sauce as it simmers and add a splash of extra chicken stock if it is becoming too thick. Taste the sauce before serving as there is less chicken stock used, so you may find that the sauce needs a tiny pinch of salt to ensure that the balance of sweet, salt and spice is to your liking.
