Mini Cheesecake In A Regular Muffin Tin

Asked by Mauju. Answered on 3rd March 2019

Full question

Hi, I would like to bake Nigella's Mini-Cheesecakes from How To Be A Domestic Goddess, but I don't have mini muffin tins. Would it be possible to use a regular muffin tin instead? And how long would I need to bake it in the oven for? Thanks!

Our answer

Nigella's Mini-Cheesecakes (from HOW TO BE A DOMESTIC GODDESS) are bite-sized cheesecakes that are made in a mini muffin tin. We suspect that they could be made in a regular muffin tin to give slightly larger cheesecakes, though the larger versions can be a little more fragile so you may like to line the cups of the muffin pan with paper cases for easier removal of the cooked cheesecakes. We would guess that the recipe would make approximately 8 of the regular muffin-sized cheesecakes.

The baking time is likely to be 15-20 minutes, but you need to bake the cheesecakes until they are shiny on top, set around the edges and still have a very slight wobble in the centre. Let the cheesecakes cool for up to 2 hours and then refrigerate them until completely cold before lifting them out of the pan. If the cheesecakes crack on top slightly this can be covered up with some fresh fruits or other decorations. However we would mention that as we have not tried the recipe in this form, we are unable to guarantee the results.
